Alex's Green Chile Enchiladas

It is always such a treat when my roomie, Alex, makes her mom's famous Green Chile Enchiladas. On Thursday night, we had a little get together full of friends, margaritas, and of course the amazing enchiladas. When I think of making enchiladas, the task seems daunting. But, this recipe is so easy to make and not to mention delicious.


4-5 breasts of chicken (cooked and diced)
2 large cans of Las Palmas Green Chile Enchilada Sauce
3 cups of grated cheese (cheddar)
1 small can of sliced black olives (drained)--Alex left those out because she is a picky eater!
1-2 doz. flour tortillas



Combine chicken, 1 1/2 cans of sauce, 2 cups of cheese and olives in a bowl
Spray bottom of 9 x 13 pan with Pam
Scoop mixture in tortilla, roll and place in pan, continue
Pour remaining sauce and cheese over top
Bake at 375 for 30-45 minutes



Sprinkle some cheese on top before placing in oven
Fresh out of the oven!
