Zesty Lemon Bars

I don't know about you, but I LOVE lemon bars...especially when they are home made! Here is my favorite recipe, which is SO easy!!


CRUST
1/4 cup granulated sugar
3 tabelspoons butter, softened
1 cup all-purpose flower

TOPPING
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tabelspoons all-purpose flour
1/2 teaspoons baking powder
1/8 teaspoons salt
2 teaspoons powdered sugar


Preheat oven to 350 degrees

To prepare crust, beat 1/4 sugar and butter at medium speed until light and fluffy.
Lightly spoon flour into a dry measuring cup, and level with a knife
Gradually add flour to sugar mixture, beating at low speed until mixture resembles fine crumbles
Gently press mixture into bottom of an 8-inch square baking pan
Bake at 350 degrees for 15 minutes, cook on a wire rack
Preparing the crust
To prepare topping, beat eggs at medium speed until foamy

Add sugar and next 5 ingredients, beat until well-blended


Pour egg mixture over partially baked crust
Bake at 350 degrees for 25 minutes or until set
Cool on wire rack
Sift powdered sugar evenly over top
