Last night, my roommate, Alex, made a fabulous dinner for us from one of her family's famous recipes that has been passed down. Pasta Fajole is a perfect end to a rainy day and is so easy to make!
Olive oil (to coat bottom of large crock pot)
1 yellow onion (chopped-with food processor is fine!)
5 cloves garlic (chopped-with food processor is fine!)
1/2 TBS dry oregano
6 tsp dry Italian seasoning
1 tsp garlic powder
4 cans (28 oz) whole, peeled tomatoes
Northern white beans (2-4 cans)
Small shell pasta
Puree tomatoes, salt, Italian seasoning, oregano, garlic, onions, and garlic powder in a blender just until smooth (don't over puree) and add to crock pot on low and leave all day.
About 2 hours before serving add Northern white beans (2-4 cans). Then boil small shell pastas at the end and add to "soup"
Alex has officially proved that just because we are college students, living in an apartment, on a budget doesn't mean we have to starve!!
